Grilled Tequila Lime Chicken

I love summertime because that means more outdoor grilling on hot summer days, which mainly involves my husband’s doing while I sit back and enjoy a cold beverage. But, I do occasionally come up with tasty meals and grill them up myself when I am feeling adventurous.

Now, I know there are some people that prefer certain types of grills. We’ve owned numerous types, but my favorite will always be a toss between wood-pellet and charcoal. There’s just something about the charcoal and smokey wood pellet flavors that deliciously seep into the meat. 

But for this recipe, I used my mom’s gas grill since we were all hungry and I wanted the Foster Farms Simply Raised chicken to cook quickly.

What is Simply Raised?

Foster Farms Simply Raised Chicken is antibiotic-free with no added hormones and fed 100% vegetarian-feed.

They also have an air-chilled variety (I couldn’t find it in my Safeway and Albertson’s stores yet) but Air-Chilling is a method for cooling chicken during processing, the benefits include better taste and texture, and faster cooking time.

Since excess water is not absorbed during air-chilling (in comparison to water-chilled chicken,) the natural juices in the air-chilled chicken are not diluted and the texture is unaltered, which leads to more flavorful and tender pieces of meat.

This recipe was Mexico inspired since I’ve been craving a getaway to escape the everyday stresses of life. You all know what I mean and since we can’t really go to Mexico right now, I figured I would bring a little Mexico home.

 

Grilled Margarita Chicken

  • Cook Time: 6 Minutes
  • Total Time: 21 Minutes
  • plus 4+ hours to marinate

 

INGREDIENTS

  • 4 cloves garlic, minced
  • 1 teaspoon ground chipotle chili pepper
  • 3/4 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons olive oil
  • 3 tablespoons tequila
  • 2 teaspoons honey
  • 1 tablespoon lime zest, from about 2 limes
  • 4 boneless skinless chicken breasts

 

INSTRUCTIONS

Combine all of the ingredients except for the chicken breasts in a quart or 1-gallon bag and squish ingredients together to get a good mix.

Add the chicken breasts and rub the marinade into the meat until it is evenly coated. Seal the bag and place it in a container so it protects against possible leakage. You will want to marinate for at least 4 hours to get that flavor soaked in.

Preheat your grill on high and grease up the grates with nonstick, nonflammable cooking spray or with a paper towel and some olive oil.

 

Then place the chicken breasts on the grill and pour any additional marinade from the bag over the top. Close the cover and grill the chicken breast for 2-3 minutes then flip and cook an additional 2-3 minutes on the opposite side. You’ll get those lovely grill marks and delicious, juicy chicken in no time!

 

I love quick and easy meals and marinade recipes are usually my favorite because the flavors meld together and make your taste buds explode. Half the time I forget to meal plan, so our chicken is usually tossed with some seasoning which ends up being quite bland still, but this Grilled Margarita Chicken was delicious and just screamed fun to me, so I had to make it for the first time! It paired well with a black bean salad using lime vinaigrette! 

 

The black bean salad is simple and quick as well. We used black beans (of course), corn, avocado, cilantro, red bell peppers, lime juice, and lime zest. My mom loved a meal being prepared for her since she hasn’t liked cooking since my dad passed, and with this, she ended up wanting more. It is so so good!
